WHOLE, HALF, QUARTER HIGHLAND BEEF SHARES
Sold by the LB hanging weight @ $7/lb. Hanging weight can very quite a bit animal to animal and can be anywhere from 400-750lbs. When you purchase a steer from us we have a mobile slaughter unit come to our farm and dispatch the animal then deliver it to the processor. The processor will then get a hanging weight on the steer so I can give you the final price. You will contact the processor to give them a cut list and how you want it packaged. The beef will age for 11-14 days before processing. Processing is approximately $1.44/lb depending on how you want it packaged. Plastic wrapped is extra. Once your beef is finished processing they will contact you to pick up, payment for processing is due at pick up.
Below is an approximate example of a hanging weight of 400lbs. The price of processing will vary depending on how you want it packaged.
(WHOLE) 400lb hanging weight steer would cost $2800 + $576 processing, and yield approximately 270lbs of individually wrapped finished product.
(HALF) 200lb hanging weight steer would cost $1400 + $288 processing, and yield approximately 135lbs of individually wrapped finished product.
(QUARTER) 100lb handing weight steer would cost $700 + $144 processing, and yield approximately 65lbs of individually wrapped finished product.

When you add up the scorecard between grass-fed beef and grain-finished beef, Grass-Fed and Finished wins hands down.
More naturally raised, 100% Grass Fed meat has:

CLA (stands for conjugated linoleic acid) is a naturally occurring fatty acid found almost exclusively in grass-fed ruminant meat and dairy. It has genuine anti-inflammatory properties, supported by solid research. The amounts in grass-fed beef are sufficient to produce measurable biological effects. The amounts in grain-fed beef are not. Grass-finished beef contains roughly 2–3 times more CLA than grain-fed beef per gram of fat, depending on the cut and grazing system. Absolute amounts vary widely by analysis method and animal diet.
Like all beef, grass-fed/finished beef is an excellent source of high-quality protein, iron, zinc, selenium, phosphorous, and B-complex vitamins. But it is superior to grain-fed beef in a number of key ways. The differences alone justify a switch to Grass Fed and Finished beef! Pasture offers hundreds of times more of these nutrients than a standard feedlot diet. As a result, grass-fed meat has up to four times more beta-carotene than conventional feedlot meat. Given all these benefits, a steak from a cow raised on pasture is even healthier for you than chicken breast. The steak has about the same amount of total fat, making it an equally good choice for a heart-healthy diet, but it has more omega-3s, less cholesterol than chicken, and more than four times more CLA.
